You can convert to manual steering two different ways.
1) Find a donor car with manual steering and get the pitman arm and the center link or drag link (you might also want the manual steering gear box because the ratio is easier that the power box, but the power box will work for manual)
2) You can get an adapter from many of the mustang parts sources that replaces the power steering control valve with a conversion part that makes it manual steering.
They run anywhere from $85 (I got mine for 85 on ebay) to $125.
The manual box has a ratio of 22 to 1 and the power box has a quicker ratio of 16 to 1 if I remember right.
