I know what you mean about a tough choice. Was in same dilemma with my 72, 200 I-6. I had envisioned a 302 powered Grabber look alike for it. But with 30 mpg, didn't do it when I was driving it daily. Then last summer had the ol buring desire again to V-8 it, but found a 74 Grabber with 302 already there.
Ok, what am I sugggesting? You have a low mileage original, don't mess it up, keep it as it is and look for a worse for wear Mav, and swap the 302 into it. Or drive the old 6 until it breaks, and swap it then. Maybe not much help, but the ol' 6 is a great engine, and like you said cheap and easy to work on. Not sure what kind of mileage you are getting, but my Grabber doesn't come close to my ol' 6, roughly half in fact the mileage. Good Luck!
